No fish or seafood recipes though please. I wont eat fish or seafood. I think it is nasty. And im avoiding rice, and sweets. I also dont wish to use fake sweeteners. I don't like Spicy food.

I am on a pretty limited budget so meat needs to be cheap cuts, hamburgers chicken stuff like that.


I like sweet and savory, I like hearty flavors, i like chillies and stews when not spicy.

I also love my crock pot, and would use that in this endevour too.


All meals, breakfasts, lunches, dinners snacks. If it could feed 8 people that'd be great too, cause 4 of us are eating and 3 out of the four like seconds.

I need to watch my sodium, my carb counts are between 40 and 65 and I do believe my sugar counts needs to be under 20, but 15 and under would be more maximum for me.

What sort of flavours do you like? Will you eat spicy things? My go-to make ahead meals are chillis, curries and stews, I'll dig out a couple of recipes when I get some time later

Oh, right that would be mega helpful. No. I don't like Spicy I am to sensitive to spicy stuff. but I like hearty, like stews, and I like sweet and savory, like sweet potato's or yams.

My mother is diabetic and I was diabetic during both of my pregnancies.

I get recipes for her off the MayoClinic website.

Also there is a site called diabetic living that that has tons of recipes and tips.

Also AmMed Direct mails out Free Diabetic cook books. The cookbook is DIABETIC DESSERTS. You will need a free gift code. The person will ask you about insurance, Medicare/Medicaid, etc, or none. They don't bill your insurance but having certain insurances qualifies you. If you want the phone number and gift code email me and I will get it to you.

Thank you Lil Squaw, but I'm not interested in deserts. I am trying to cut pretty much all sweets out of my life, other than the very rare occasional one. And it would be store bought most likely, but I still keep an eye on the carb count and sugar count of store bough candies, or chocolate bars or what ever it is.

I understand that I thought I would offer the information.. just so you know the 1st two sites have recipes diabetic recipes of all kinds. The mayo clinic is actually my favorite source for diabetic recipes.

Stir frys are a wonderful option TFB and you can always find frozen veggies on sale and even if you add 1 Tablespoon of olive oil to each pan a bottle of olive oil lasts forever.

Here's what our day typically looks like:

2 eggs scrambled with a few mushrooms and pieces of broccoli and a touch of shredded cheese. (Don't buy it pre-shredded, it's coated with starch), 1/3 cup of black beans or ranch beans and coffee. Master drink his black, I drink mine with almond milk. One or two times a week we will do steel cut oatmeal.

Snack: string cheese, slice of deli meat with hummus, almonds or low carb yogurt.

Lunch: Protein over salad. I usually cook a little extra meat the night before. I will also do tuna, chicken or egg salad. If it's meat, I do a homemade lemon vinagrette. I have 1 diet coke with lunch.

Snack: same as above.

Dinner: Protein with a green veggie or salad along with 1/3 cup of black or ranch beans or Quinoa.



As for recipes:

You can do a meat loaf, substitute grated parmesan for the bread crumbs.

I do a mild Mexican frittata: eggs, shredded cheese, black beans, a little bit of corn, fire roasted chilis and marinated chicken. I use chicken leg quarters, marinate in lemon and cheap tequila, pre cook them and shred when cool enough to put into the frittata.

I have PCOS and I've been insulin resistant since age 17 because of that, so I've had a long time to put together some meals.

It's a shame the Mayoclinic website doesn't list sugar grams too. That is a big thing I am interested in knowing about the recipes.

I don't know if you can freeze this, but a veggies, sausage, and cheddar frittata would be good. It's got only 10 carbs and 21grams of protein.

Ingredients
Cooking spray
1 green bell pepper, chopped
1 (8-ounce) package presliced mushrooms
4 (1.3-ounce) frozen vegetable protein sausage patties, thawed and crumbled
1/8 teaspoon salt
1/8 teaspoon freshly ground black pepper
1 cup egg substitute
1/4 cup fat-free half-and-half
1/2 cup (2 ounces) shredded reduced-fat sharp Cheddar cheese

Prep
Preheat broiler.

Place a 12-inch ovenproof nonstick skillet over medium-high heat. Coat pan with cooking spray. Add chopped bell pepper and mushrooms; sauté 3 minutes. Add sausage, salt, and pepper; reduce heat to medium-low, and cook 1 minute.

Combine egg substitute and half-and-half; carefully pour over sausage mixture. Cover and cook 6 minutes. (Frittata will be slightly moist on top.) Sprinkle with cheese.

Broil 1 to 2 minutes or until cheese melts. Cut into 8 wedges.

There's a website called http://thehomesteadsurvival.com/ that posts a collection of free kindle version of various ebooks - they've had a lot of diabetic recipe books, and you can download a free kindle reader for your computer. keep an eye on the site and see if any new diabetic recipe books pop up.

Make eggplant or chicken (or something else) parmigiana. Except substitute chopped nuts or pumpkin seeds for the flour breading.

I have a friend who pre-makes all her meals ahead of time. She does what she calls dump chicken. Essentially what she does is takes chicken and puts it into a freezer bag with some kind of sauce/marinade and then lays them flat in the freezer. She pulls them out as she is ready to use them and either grills them or bakes them. It's a great idea and I might start doing that.

I pre-cook 90% of my meals.

TFB... beans are a wonderful tool.
They are healthy and dirt cheap.
They also give you a lot of flexibility with what you do with them.


Sometimes I simply have a bowl of beans with a salad.
Other times I will make burritos with whole wheat tortillas and freeze them.
Either way I make a pot that lasts me and my son a week and we eat beans at least 1x per day.

I buy fresh produce when in season other wise I go with frozen.
I make up stir fry bags, where everything is measured out.
Bags are labeled.
All I have to go is grab, add 1 tbsp of olive oil and go.

If I want stir fry with a pasta... I simply cook whole wheat pasta and add 4 oz to my stir fry mix in the wok.

I make whole wheat pancakes 1x per week.
This week I made blueberry, pumpkin, and banana and walnut.
I use 1/4 cup of blueberries for 12 pancakes so you really aren't getting a lot of the fruit.

That's ok if you like various different beans.
I've tried most and I can't stand them.

Frozen is nowhere near as good as fresh produce.
In many cases, freezing something destroys the natural fibre and breaks natural protein strands.
And in a lot of circumstances, isn't as cheap either.

Some nice ideas if you like whole wheat.
Personally, I don't. I think it spoils a lot of food with the wrong taste.
I love pancakes - but not made with whole wheat.

But I guess it takes all sorts.
